Red 2000 : All wine professionals agree that 2000 vintage is a great vintage in the story of the Bordelais. This great god's nectar is harmonious. Besides all his gustative pleasures, he will delight your eyes with its great intense and brilliant colour, and your nose with its res-fruity aroma. All his flavours will be appreciated with red meals, games or strong cheese. Red 2001 : Long-awaited and special vintage. With its aromas of red-fruits and its smoothed tannins, this wine is already excellent to taste. It goes well white meals, poultry as well as soft cheeses. Do not hesitate to drink it with a chocolate fondant, and you will be charmed ! White : Full and voluptuous in mouth, our white wine goes well with salads, white meals or fishes, as well as desserts. | What is the best way to store wine bottles? Store wine bottles on their side, preferably in a dark and adequately ventilated place with a temperature between 11 and 18°C and an air humidity between 70 and 80°. |
| It is important for the temperature and air humidity to be kept constant ! For example : it is better if your bottles are kept at a constant 19°C, than if they are stored in a location with a temperature that varies according to the season. This also applies where the temperature variations do not exceed the maximum or minimum values given above. |

How should a wine be served ?
White wine : There are two sorts of white wine. Dry whites, and the sweet or liqueur-style whites. Serve dry wines before sweet ones. Very generally, white wine should be served chilled, dry wines between 10° and 12° and sweet wines at 6°. The bottle should reach the desired temperature gradually, never put a bottle of wine in the deep freezer. In all cases, white wines are served before red wines. Red wine : It is preferable to serve young wines before old wines, , in the same way as delicate wines are served before more robust wines. According to the character of the wines, they should be served at differing temperatures. A red wine is served at a temperature of 16° to 19° according to whether it is a young or a mature wine. As for white wine, the bottles should be brought to the correct temperature in a gradual and non-brutal manner. Never put a bottle on a radiator or in the microwave. It is best to get the bottles out of the cellar a few hours before you plan to serve the wine. |

How do you decant a bottle ?
What does "decanting a bottle" actually mean? It simply refers to the process of transferring the contents of a bottle carefully into a wine carafe, in order to air it and separate it from the sediment that may have accumulated over the years. The various wines are not all decanted in the same way. Some wines should be decanted several hours before they are consumed, others just before. Most often, the best thing is to trust your feeling and experience. |
